It seems my last post got the fur flying and ruffled some feathers over at the MFAA, Millstone Farm Animal Association. There was umbrage taken by its membership, including (in alphabetical order so as not to give precedence to any one species): alpacas, bees, chickens, ducks, geese, goats, lamas and peacocks. Umbrage about the bees, their swarm and their star turn in the July issue of Organic Spa being singled out, because back in June the alpacas, chickens, goats, lamas and peacocks were cited in an article entitled 7 Hotels with Adorable Animal Employees on VetStreet.com. So here, MFAA, is a link to that piece http://www.vetstreet.com/our-pet-experts/7-hotels-with-adorable-animal-employees

Now, please cease and desist with the rumors about me showing favoritism to the bees.

While I now risk being accused of having a chicken bias, I think our flock of heritage hens makes a valid point about their eggs being just as important to our operation here at Buttermilk Falls Inn + Spa as the bees honey. You see their eggs are harvested daily to make the cooked to order portion of our guests’ breakfast, as well as for use in Henry’s at the Farm’s kitchen in our house made scones presented at afternoon tea and in the scrumptious desserts by our new pastry chef Tammy Ogletree, who happens to be married to Henry’s new executive chef, Chad Greer, which warrants a whole post in and of itself. But I digress. Back to the chickens.

Wondering what the word “heritage” means in relations to our hens? It’s pretty much like the more common usage in connection with tomatoes – our hens represent breeds (varieties in the case of tomatoes) that have fallen out of favor in the face of the competition from hybrids commercially bred for quick growth and optimal production or eggs or meat and are therefore at risk for extinction. By definition, Heritage Chickens take longer to mature, 16 to 18 weeks as opposed to six weeks for their commercial brethren and reproduce entirely naturally, rather than relying on artificial insemination as is the common commercial practice.

The chickens also thought I should point out both stories referring to the MFAA membership were written by Nora Zelevansky, whose first novel was just published by St. Martin’s Press. It’s called SEMI-CHARMED LIFE and the MFAA tells me it’s a delightful coming-of-age tale about a “typical” Upper West Side young woman getting swept up in the dizzyingly glamorous life of a socialite, when she starts writing the bold faced named one’s blog. It’s all fun, heady stuff until some of the dark elements of such a high profile existence surface. To find out more, click here: http://norazelevansky.com.s118336.gridserver.com/books/

It will likely not surprise you to learn the MFAA is lobbying for Nora to do a reading and book signing at Buttermilk! I’ll let you know.

Who loves apples? Henry loves apples! The owner of the Buttermilk Falls Inn + Spa, Robert Pollock, has a soon-to-be three year old son named Henry. He loves the fresh and satisfying taste of our own Millstone Farm apples, and who can argue? There are plenty of different varieties of apples to choose from, such as red delicious, golden delicious, and so on. Millstone Farm grows much of the fruit and vegetables we use in our signature dishes at Henry’s Farm to Table, our new dining restaurant. Henry loves our apples so much, we have to stop him from picking all of them! Here is a picture of the little guy in our orchard.

Celebrate New York State’s official fruit at Henry’s Farm to Table, the new dining destination at Milton, NY’s Buttermilk Falls Inn + Spa, during the first New York Cider Week, October 16 – 23, a salute from more than 80 Hudson Valley and New York City establishments to hard cider – once America’s favorite alcoholic beverage, now enjoying a revival. Sponsored by the Glynwood Farm Apple Project, dedicated to the preservation of traditional apple growing in New York State, Cider Week will be awash in tastings, special events and classes exploring the joys of drinking hard cider, the dry sophisticated beverage made from apples as tannic and astringent as wine grapes, with the complexities of flavor and the distinct varieties in style of fine wine or beer.

For Cider Week at Henry’s Farm to Table, complimentary ciders will be paired with a special three course menu created by Executive Chef Paul Kelly to showcase the nuances of the three varieties from Bellwhether Hard Cider www.cidery.com, as well as the bounty of Henry’s own 40-acre working farm, Millstone. The Cider week menu can be enjoyed as a whole for $48.00 per person, or any of the three courses with their complimentary cider pairing can be order à la carte.
